  • 225 grams cherry tomatoes Look for glossy, fragrant tomatoes.
  • 85 grams arugula Fresh, crisp leaves should be bright green.
  • 1/2 cup pecans Toast for deeper flavor.
Dressing
  • 1 tbsp fresh lemon juice Use juice from half a lemon.
  • 1 tsp Dijon mustard Emulsifies the dressing.
  • 1/2 tsp dried oregano Adds a warm herbal note.
  • 3 tbsp extra-virgin olive oil Use a fruity, good-quality oil.
  • a pinch salt Season gently.
  • a pinch ground black pepper Season to taste.

Method
 

Make the Dressing
  1. Whisk together the mustard, lemon juice, optional lemon zest, dried oregano, salt, black pepper, and olive oil.
Assemble the Salad
  1. In a bowl, add the halved cherry tomatoes and pour the dressing over them.
  2. Add the chopped avocado and optional toasted pecans to the bowl.
  3. Gently toss everything together just before serving.
