Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- Season both sides of the chicken breasts with salt, pepper, and paprika. Let them rest at room temperature for about 10 minutes.
- In a large skillet over medium-high heat, heat olive oil. Once hot, sear the chicken for 2–3 minutes on each side until golden brown. Remove from the skillet and set aside.
- Reduce heat to medium and add minced garlic to the same skillet. Sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and let it simmer for 1–2 minutes.
- Stir in the softened cream cheese until smooth. Fold in chopped chives and adjust seasoning with salt and pepper.
Cooking
- Place the seared chicken breasts in the prepared baking dish. Pour the cream cheese mixture over the top.
- If desired, sprinkle shredded cheddar cheese on top.
- Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- If using cheese, turn on the broiler for the last 2–3 minutes for a golden top.
- Garnish with fresh parsley before serving.
Notes
Letting the chicken rest before cutting ensures juiciness. Adjust seasoning to taste after incorporating cream cheese. Use alternative cheeses or add spices to customize flavor.
