Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- Season the chicken breasts with salt, pepper, and paprika on both sides. Let rest for about 10 minutes.
- In a skillet over medium-high heat, warm olive oil. Sear the chicken for 2-3 minutes on each side until golden brown, then set aside.
- Reduce the heat to medium, add minced garlic to the skillet, and sauté for 30 seconds until fragrant.
- Pour in chicken broth and simmer for 1-2 minutes.
- Stir in softened cream cheese until the sauce is smooth. Add chopped chives and season with salt and pepper.
- Place seared chicken in the baking dish and pour the cream cheese mixture over it. Top with cheddar cheese if desired.
Cooking
- Bake for 25-30 minutes, until chicken reaches an internal temperature of 165°F (74°C). Broil for 2-3 minutes if using cheese.
- Garnish with freshly chopped parsley and serve warm.
