  • 4 pieces boneless, skinless chicken breasts (about 6-8 oz each) Choose fresh cuts without any discoloration.
  • 1 cup ricotta cheese (preferably whole milk) Opt for whole milk ricotta for a creamier texture.
  • ½ cup grated Parmesan cheese (freshly grated) Freshly grated for better melting.
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt Season generously.
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley (optional) Fresh herbs can elevate the dish.
  • 2 tablespoons olive oil (extra virgin preferred) For greasing and drizzling.
  • 1 cup marinara sauce (optional, for serving) Can be served on the side or spooned over the chicken.

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Pat the chicken breasts dry with paper towels and place them in the prepared baking dish.
  3. In a medium bowl, mix together the ricotta cheese, grated Parmesan, garlic powder, Italian seasoning, salt, pepper, and chopped parsley if using. Stir until well combined.
  4. Spread the ricotta mixture evenly over the top of each chicken breast.
  5. Drizzle olive oil over the ricotta-topped chicken.
Cooking
  1. Bake for 25-30 minutes or until the chicken is cooked through and the ricotta topping is golden and bubbly.
  2. Optionally, warm the marinara sauce while the chicken is baking.
  3. Serve with marinara sauce on the side or spooned over the top.

Notes

Allow to rest for a few minutes after baking to retain juices. Adjust cooking time based on chicken breast size.
