Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
- Pat the chicken breasts dry with paper towels and place them in the prepared baking dish.
- In a medium bowl, mix together the ricotta cheese, grated Parmesan, garlic powder, Italian seasoning, salt, pepper, and chopped parsley if using. Stir until well combined.
- Spread the ricotta mixture evenly over the top of each chicken breast.
- Drizzle olive oil over the ricotta-topped chicken.
Cooking
- Bake for 25-30 minutes or until the chicken is cooked through and the ricotta topping is golden and bubbly.
- Optionally, warm the marinara sauce while the chicken is baking.
- Serve with marinara sauce on the side or spooned over the top.
Notes
Allow to rest for a few minutes after baking to retain juices. Adjust cooking time based on chicken breast size.
