  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil For searing the chicken
  • 2 cloves garlic, minced

Preparation
  1. Preheat your oven to 375°F (190°C) while you prepare the chicken.
  2. In a mixing bowl, thoroughly combine the softened cream cheese, chopped spinach, sun-dried tomatoes, shredded mozzarella, minced garlic, salt, and pepper until well-blended and creamy.
  3. Take each chicken breast and carefully slice a pocket into the side, ensuring not to cut all the way through.
  4. Heat the olive oil in a skillet over medium heat. Once hot, sear each stuffed chicken breast for about 3-5 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish and bake for 20-25 minutes until the chicken is cooked through and cheese is bubbly.
  6. Serve hot, enjoying the comforting warmth of this Italian-inspired dish.

Notes

For added flavor, marinate the chicken in Italian seasoning for a couple of hours or overnight. Let the chicken rest for a few minutes after baking to allow juices to redistribute.
