Ingredients

Main Ingredients
  • 1 pound boneless, skinless chicken breasts Choose fresh organic for the best flavor.
  • 2 cups cooked rice (white or brown) Any rice works; brown rice or quinoa can be healthier options.
  • 1 cup broccoli florets
  • 1 unit red bell pepper, sliced
  • 1 unit carrot, julienned
  • 3 units green onions, chopped
  • ½ cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce Adjust for spice level.
  • 1 tablespoon soy sauce Use gluten-free soy sauce for a gluten-free option.
  • Salt and pepper to taste
  • 2 tablespoons oil (for cooking)
  • Sesame seeds (for garnishing)

Method

Preparation
  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat oil in a large skillet over medium heat.
  3. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Set aside.
Cooking
  1. In the same skillet, sauté the broccoli, red bell pepper, and carrot for about 3-5 minutes until tender but crisp.
  2. In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, and soy sauce, stirring until smooth.
  3. Return the cooked chicken to the skillet with the sautéed vegetables and pour the sauce over everything, stirring to coat evenly.
Assembly
  1. Spoon a layer of cooked rice into serving bowls.
  2. Generously spoon the chicken and vegetable mixture over the rice.
  3. Garnish each bowl with chopped green onions and sesame seeds.
  4. Serve hot and enjoy!

Notes

For best texture, avoid overcooking the chicken and quickly sauté the vegetables. Adjust salt and spice levels gradually for the best flavor balance.
