Ingredients

Main Ingredients
  • 1 lb boneless, skinless chicken breasts (about 3-4 pieces) Opt for organic or free-range chicken for the best flavor.
  • 3 cloves fresh garlic, minced
  • 1/2 cup chili sauce Use sweet chili sauce for a milder flavor or add red pepper flakes for more heat.
  • 1/2 cup mayonnaise Use light for a healthier option or substitute with Greek yogurt.
  • 4 pieces green onions, finely chopped Choose bright green onions for the freshest flavor.
  • 3 cups cooked rice or noodles Can be substituted with gluten-free options if necessary.
  • 1/4 cup low-sodium soy sauce Use tamari for a gluten-free version.
  • 2 tablespoons honey Agave syrup can be used for a vegan option.
  • 1 unit juice of lime, freshly squeezed

Method

Preparation
  1. Chop the chicken into bite-sized pieces and mince the garlic.
Cooking
  1. In a skillet, heat 1 tablespoon of oil over medium-high heat. Cook the chicken pieces for about 7-10 minutes or until they are golden brown and fully cooked.
  2. In a separate bowl, mix the mayonnaise, chili sauce, soy sauce, honey, and freshly squeezed lime juice until smooth and creamy.
  3. Lower the heat, pour the sauce over the cooked chicken, and stir well. Allow to simmer for 2-3 minutes for the flavors to meld.
Serving
  1. Place the rice or noodles in bowls, top with the saucy chicken, and finish with a sprinkle of green onions.

Notes

For extra flavor, marinate chicken in sauce for 30 minutes before cooking. Garnish with sesame seeds or chopped peanuts if desired.
