Ingredients

For the Chicken Marinade
  • 4 pieces chicken thighs Bone-in, skin-on for juiciest results; substitute chicken breasts if preferred.
  • 2 cups buttermilk Adds acidity and tenderizes; use plain yogurt thinned with milk as a substitute.
  • 1 teaspoon salt Season marinade and flour for deeper flavor.
  • 1/2 teaspoon pepper Adjust to taste for milder palettes.
  • 1 teaspoon paprika Adds warmth; smoked paprika can provide a smoky flavor.
  • 1/2 teaspoon garlic powder For a concentrated savory hit; can use fresh garlic in marinade instead.
  • 1/2 teaspoon onion powder Provides background sweetness; can substitute finely grated onion.
For the Coating
  • 1 cup flour All-purpose for classic crust; a mix of cornstarch and flour can lighten the texture.
  • Oil for frying neutral oil (canola, sunflower, or peanut) Use for frying; high smoke point is important.

Method

Marination
  1. Marinate chicken thighs in buttermilk and seasoning mix for at least 1 hour or overnight.
Cooking
  1. Preheat oil in a deep fryer or heavy pot to 350°F (175°C).
  2. Dredge marinated chicken in flour, shaking off excess.
  3. Fry chicken in batches until golden brown and cooked through, about 12-15 minutes per piece.
  4. Drain on paper towels before serving.

Notes

For the best results, control oil temperature and avoid overcrowding in the frying pan. Serve with sides like mashed potatoes, coleslaw, or a fresh salad.
