Cooking Chicken
- In a large skillet over medium heat, sear the seasoned chicken for about 5 minutes on each side until browned.
Adding Sauce and Rice
- Whisk together the BBQ sauce and honey in a small bowl; then pour it over the chicken, coating it generously.
- Add the rice and chicken broth. Stir to combine all the ingredients and ensure the rice is submerged.
Cooking
- Bring to a simmer; cover and cook on low heat for about 20 minutes until the rice is tender and absorbs the flavors.
- During the last 5 minutes of cooking, add the mixed vegetables on top to steam gently.
- Let the dish sit for 5 minutes before fluffing the rice with a fork and serving while warm.
Notes
You can marinate the chicken in the BBQ sauce and honey a few hours before for deeper flavor. Also, try using quinoa or couscous as alternatives to rice.
