  • 1 lb boneless, skinless chicken thighs or breasts Opt for chicken thighs for juicier flavor.
  • 1 cup long-grain rice Ensure it's not past its expiration date.
  • 2 cups chicken broth Vegetable broth can be used for a vegan option.
  • ½ cup BBQ sauce Use your favorite BBQ sauce.
  • ¼ cup honey Adjust according to sweetness preference.
  • 1 cup mixed vegetables (frozen or fresh) Choose vibrant, crisp vegetables.
Seasoning Ingredients
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • to taste Salt and pepper Adjust according to personal preference.

Method
 

Cooking Chicken
  1. In a large skillet over medium heat, sear the seasoned chicken for about 5 minutes on each side until browned.
Adding Sauce and Rice
  1. Whisk together the BBQ sauce and honey in a small bowl; then pour it over the chicken, coating it generously.
  2. Add the rice and chicken broth. Stir to combine all the ingredients and ensure the rice is submerged.
Cooking
  1. Bring to a simmer; cover and cook on low heat for about 20 minutes until the rice is tender and absorbs the flavors.
  2. During the last 5 minutes of cooking, add the mixed vegetables on top to steam gently.
  3. Let the dish sit for 5 minutes before fluffing the rice with a fork and serving while warm.

Notes

You can marinate the chicken in the BBQ sauce and honey a few hours before for deeper flavor. Also, try using quinoa or couscous as alternatives to rice.
