  • 1 cup buttermilk Substitute with milk and vinegar if necessary
  • 3 large eggs Room temperature for better mixing
  • 0.25 cups fresh lemon juice Zest before juicing
  • 1 tablespoon baking powder Ensure freshness for best results
  • 0.5 teaspoon salt Adjust if using salted butter
  • 1 teaspoon vanilla extract
For the frosting
  • 8 oz cream cheese, softened Bring to room temperature to avoid lumps
  • 0.5 cups unsalted butter, softened
  • 3-4 cups powdered sugar Adjust for desired sweetness
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon for frosting

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a bundt or cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in the buttermilk, lemon juice, lemon zest, and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Frosting
  1. Beat together the cream cheese and butter until creamy. Gradually add powdered sugar, lemon juice, and lemon zest until smooth.
  2. Frost the cooled cake and enjoy!
