  • 4 pieces boneless, skinless chicken breasts (cut into large chunks) Fresh chicken breasts are recommended for best texture.
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning (or a mix of basil, oregano, and thyme)
  • to taste Salt & black pepper
  • 2 cups cherry tomatoes (or diced Roma tomatoes) Choose vibrant, ripe tomatoes for sweetness.
  • 1 cup shredded mozzarella cheese Feel free to mix cheeses for a unique taste.
  • ½ cup grated Parmesan cheese
  • ½ cup fresh basil leaves, chopped Fresh basil adds a lovely finishing touch.
  • 1 tbsp balsamic glaze (optional, for drizzling) Adds an elegant touch.

Method
 

Preparation
  1. Preheat the oven to 190°C (375°F).
  2. In a large bowl, season the chicken with olive oil, minced garlic, Italian seasoning, salt, and black pepper. Toss well to ensure the chicken is thoroughly coated.
  3. Heat a skillet over medium-high heat. Add the chicken and sear for 2–3 minutes per side until golden brown.
  4. Transfer the chicken to a baking dish. Top with diced tomatoes, mozzarella cheese, and Parmesan cheese.
  5. Bake in the preheated oven for 20–25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
  6. Garnish with fresh basil and a drizzle of balsamic glaze before serving.

Notes

For best results, allow the chicken to marinate for a few hours for deeper flavor. Leftovers can be stored in an airtight container for up to three days.
