- In a large pot, heat a drizzle of olive oil over medium heat.
- Add diced onion, bell pepper, and minced garlic. Sauté until softened and fragrant, about 3-5 minutes.
- Season diced chicken with salt, pepper, and Cajun seasoning. Add to the pot and brown on each side for about 5 minutes.
- Stir in orzo and chicken broth; bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and chicken is cooked.
- Remove from heat and stir in heavy cream. Cook for an additional 2-3 minutes until creamy.
- Garnish with chopped parsley before serving.
Notes
You can marinate the chicken in Cajun seasoning beforehand for deeper flavor. Leftovers can be stored for up to 3 days in the fridge or frozen up to 3 months.
