  • 2 pieces chicken breasts, diced Choose boneless, skinless for quick cooking.
  • 1 cup orzo pasta Substitute with ditalini or acini di pepe if needed.
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 piece bell pepper, diced
  • 1 teaspoon Cajun seasoning Adjust based on spice preference.
  • 1 cup chicken broth
  • 1 cup heavy cream Can use half-and-half for a lighter version.
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Method
 

Cooking
  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add diced onion, bell pepper, and minced garlic. Sauté until softened and fragrant, about 3-5 minutes.
  3. Season diced chicken with salt, pepper, and Cajun seasoning. Add to the pot and brown on each side for about 5 minutes.
  4. Stir in orzo and chicken broth; bring to a boil.
  5. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and chicken is cooked.
  6. Remove from heat and stir in heavy cream. Cook for an additional 2-3 minutes until creamy.
  7. Garnish with chopped parsley before serving.

Notes

You can marinate the chicken in Cajun seasoning beforehand for deeper flavor. Leftovers can be stored for up to 3 days in the fridge or frozen up to 3 months.
