Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts For juicier meat, consider using thighs instead.
  • 1 cup sour cream Look for full-fat sour cream for a richer flavor.
  • 1 cup shredded cheese (cheddar or your choice) Mixing cheeses can elevate the taste.
  • 1 can cream of mushroom soup You can create a homemade version with fresh mushrooms.
  • 1 tablespoon garlic powder
  • to taste Salt and pepper Generously season chicken for flavor.
  • 1 tablespoon olive oil For cooking the chicken.
  • to garnish Chopped parsley Optional for garnish.

Method

Preparation
  1. Start by heating the olive oil in a large pot over medium heat.
  2. Generously season both sides of the chicken breasts with salt, pepper, and garlic powder.
Cooking
  1. Add the seasoned chicken to the pot and cook until browned on both sides, about 5-7 minutes.
  2. In a separate bowl, stir together the sour cream and cream of mushroom soup until combined and smooth.
  3. Pour this creamy mixture over the chicken, then sprinkle the shredded cheese generously on top.
  4. Cover the pot and let it simmer on low heat for about 20 minutes or until the chicken is fully cooked.
Serving
  1. Just before serving, sprinkle some chopped parsley on top for a pop of color and freshness.

Notes

For best results, let the chicken rest for a few minutes after cooking. Consider using different types of cheese for variety. This dish can easily be made vegan by substituting chicken with tofu and using dairy-free alternatives.
