- In a large pot, combine the chicken breasts, chili powder, tomato sauce, chopped onion, minced garlic, and enough water to submerge the chicken. Bring to a simmer and let it cook until the chicken is tender and fully cooked, around 25 minutes.
- Carefully remove the chicken from the pot, shred it with two forks, and return it to the pot. Let it simmer for another 15 minutes to absorb the wonderful flavors.
- Heat a skillet over medium heat and add a dash of oil.
- Place one tortilla in the skillet, then add a layer of cheese followed by a generous portion of the chicken mixture. Top with another tortilla.
- Cook for about 3-4 minutes until the bottom tortilla is crispy and golden brown. Flip and repeat on the other side.
- Once both sides are perfectly crispy, remove from the skillet, slice in half, and garnish with fresh cilantro and lime wedges. Serve immediately and enjoy!
Notes
You can prepare the chicken mixture a day in advance, storing it in the fridge. When ready to eat, just reheat and assemble your tacos! Additionally, all cooked tacos can be frozen for an easy meal later—just reheat on the stove.
