  • 1 cup black beans (canned, drained, and rinsed) Rinse to reduce sodium content.
  • 1 cup corn (canned or frozen) Fresh or frozen can be used interchangeably.
  • 1 can (14 oz) diced tomatoes with green chilies Adjust for spice levels as desired.
  • 1 cup salsa
  • 1 packet taco seasoning Adjust the amount to taste.
  • 1 bell pepper (chopped)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
For Serving
  • Cooked rice or quinoa Base for serving.
  • Avocado (sliced) For garnish.
  • Sour cream For garnish.
  • Shredded cheese For garnish.
  • Fresh cilantro For garnish.

Method
 

Preparation
  1. Pat the chicken dry with a paper towel and season both sides with salt and pepper.
  2. Dice the bell pepper and onion; mince the garlic.
  3. In the slow cooker, layer the chicken, black beans, corn, bell pepper, onion, and garlic.
  4. Pour the diced tomatoes and salsa over the top, then sprinkle in the taco seasoning.
Cooking
  1. Cover the slow cooker and cook on low for 4-6 hours or high for 2-3 hours until the chicken is tender.
  2. Shred the chicken using two forks, mix it back into the ingredients, and serve over rice or quinoa.

Notes

Option to customize toppings and adapt for different palates. Can be made ahead and stored for easy meal prep.
