Preparation
- Pat the chicken dry with a paper towel and season both sides with salt and pepper.

Cooking
- Cover the slow cooker and cook on low for 4-6 hours or high for 2-3 hours until the chicken is tender.
- Shred the chicken using two forks, mix it back into the ingredients, and serve over rice or quinoa.
