Ingredients

For the Salad
  • 2 stalks romaine lettuce Choose crisp, bright green stalks with firm leaves.
  • 1 cup cooked chicken, shredded or cubed Use leftover roasted or grilled chicken for flavor.
  • 1 cup uncooked rotini (or preferred pasta) Hold dressing in spirals; cook al dente.
  • ½ cup shredded Parmesan cheese Freshly shredded tastes brighter than pre-grated.
  • 1 cup croutons Choose sturdy croutons that resist sogginess.
  • 1 cup Caesar dressing A creamy, garlicky dressing brings everything together.
  • black pepper (optional) Freshly cracked pepper adds a gentle bite.

Method

Preparation
  1. Cook the rotini pasta according to package instructions, drain, rinse with cold water, and set aside.
  2. Shred or cube the cooked chicken and set aside to cool.
  3. Wash and chop the romaine lettuce into bite-sized pieces, discarding the core.
Assembly
  1. In a large mixing bowl, combine the lettuce, cooked pasta, shredded chicken, croutons, and Parmesan cheese.
  2. Add the Caesar dressing and toss gently until all ingredients are evenly coated.
  3. If desired, sprinkle with black pepper and toss again. Serve immediately.

Notes

Keep dressing and croutons separate until ready to eat; combine and toss just before serving to maintain texture. Rinsing the pasta stops the cooking process and helps prevent a gummy texture. Reserve a spoonful of pasta water if the dressing seems too thick.
