  • 2 cups Tomatoes (heirloom or cherry) Choose ripe tomatoes; halve cherry tomatoes for presentation.
  • 1 handful Fresh basil Fresh basil is essential for flavor.
  • 1 each Avocado (ripe and buttery) Add fresh immediately before serving for best texture.
  • 2 tablespoons Olive oil (extra virgin) Use high-quality olive oil for enhanced taste.

Method
 

Preparation
  1. Marinate the chicken in balsamic dressing for at least 30 minutes.
  2. Heat a skillet over medium-high heat and sear the marinated chicken for 6-7 minutes on each side until browned and cooked through.
  3. In a large bowl, combine chopped tomatoes, sliced mozzarella, fresh basil, and diced avocado.
  4. Once cooked, let the chicken rest for a few minutes, then slice into strips and add to the salad bowl.
  5. Drizzle with olive oil, and season with salt and pepper to taste.
  6. Gently toss all the ingredients together until well combined and serve fresh.

For maximum flavor, consider marinating the chicken for up to 2 hours or overnight. Always use the freshest ingredients possible.
