  • 1 medium Yellow Onion, finely diced Sweet onion for base flavor; red onion can be used for more bite.
  • 1 cup Diced Carrots For sweetness and texture; baby carrots can be substituted.
  • 1 cup Frozen Green Peas Keep color after baking; fresh peas can be used when in season.
  • 2 cups Chicken Broth Low-sodium for better salt control; can substitute with vegetable broth.
  • 1 cup 2% Milk Helps create creamy texture; can use plant milks for dairy-free option.
  • 8 ounces Shredded Cheddar Cheese, divided Sharp cheddar for best flavor; shred your own for better melt.
  • 1 teaspoon Garlic Powder Convenient and evenly distributes flavor.
  • 1 teaspoon Salt Enhances flavor; adjust to taste.
  • 1/2 teaspoon Ground Pepper Freshly ground for best flavor.
  • 1.5 pounds Boneless, Skinless Chicken Breast Lean meat that cooks evenly.
  • 1 ounce Shredded Parmesan Cheese Adds a savory finish and helps with browning.

Method

Preparation
  1. Preheat the oven to 375°F and lightly grease a 9x13 baking dish.
  2. Prepare the ingredients: chop the broccoli, dice the onion, and measure out the rice, carrots, and peas.
  3. Season the chicken breasts with salt, pepper, and garlic powder, then sear in a hot skillet for about 2 minutes per side until golden.
Assembly and Baking
  1. In a large bowl, combine the Brown Minute Rice, vegetables, garlic powder, salt, pepper, chicken broth, and milk; stir until well mixed.
  2. Slice the seared chicken and arrange it into the rice mixture in the baking dish, topping with half the cheddar cheese.
  3. Sprinkle the remaining cheddar and parmesan on top, cover with foil, and bake for 30 minutes.
  4. Remove the foil and bake for an additional 8-10 minutes until the cheese is browned.
  5. Let it rest for 5 minutes before serving.

Notes

For variations, use cubed firm tofu for a vegan option or add spices to adjust flavor. Allow leftovers to cool quickly and store in airtight containers for optimal texture.
