Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine shredded chicken, 1 cup enchilada sauce, diced onions, garlic powder, cumin, salt, and pepper. Mix thoroughly.
Assembly
- Take a flour tortilla and spoon some of the chicken mixture onto its center. Roll it up tightly and place seam-side down in a greased 9x13 baking dish.
- Repeat the process with the remaining tortillas and chicken mixture.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle cheese on top.
Baking
- Bake for 20-25 minutes or until cheese is melted and bubbly.
- Serve hot, topped with optional garnishes like cilantro, sour cream, or avocado.
