Enchilada Assembly
  • 2 cups enchilada sauce Choose a bold brand for richness.
  • 2 cups shredded cheese (e.g., cheddar or Monterey Jack) Combining cheeses is encouraged.
  • 8 pieces flour tortillas Can use corn tortillas for gluten-free.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken, 1 cup enchilada sauce, diced onions, garlic powder, cumin, salt, and pepper. Mix thoroughly.
Assembly
  1. Take a flour tortilla and spoon some of the chicken mixture onto its center. Roll it up tightly and place seam-side down in a greased 9x13 baking dish.
  2. Repeat the process with the remaining tortillas and chicken mixture.
  3. Pour remaining enchilada sauce over the rolled tortillas and sprinkle cheese on top.
Baking
  1. Bake for 20-25 minutes or until cheese is melted and bubbly.
  2. Serve hot, topped with optional garnishes like cilantro, sour cream, or avocado.
