Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, bell pepper, onion, black beans, corn, salsa, chili powder, cumin, rice, and half of the cheese. Season with salt and pepper to taste.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Top with the remaining cheese.
Baking
- Bake in the preheated oven for 25-30 minutes until heated through and the cheese is bubbly and golden.
- Serve warm and enjoy your delicious one-pan chicken fajita casserole.
Notes
You can prep the casserole ahead of time. It can be kept for 2-3 days in the refrigerator or frozen for up to 3 months. To reheat, bake at 350°F until warmed through.
