  • 1 cup corn
  • 2 cups cooked rice

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, bell pepper, onion, black beans, corn, salsa, chili powder, cumin, rice, and half of the cheese. Season with salt and pepper to taste.
  3. Transfer the mixture to a greased casserole dish and spread evenly.
  4. Top with the remaining cheese.
Baking
  1. Bake in the preheated oven for 25-30 minutes until heated through and the cheese is bubbly and golden.

Notes

You can prep the casserole ahead of time. It can be kept for 2-3 days in the refrigerator or frozen for up to 3 months. To reheat, bake at 350°F until warmed through.
