Cooking Pasta
- Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water to stop cooking.
Grilling Chicken
- Preheat grill or grill pan. Rub chicken with olive oil and Italian seasoning, grill for 6-7 minutes on each side until cooked.
- Let rest for 5 minutes before slicing.
Preparing Dressing
- In a bowl, whisk olive oil, apple cider vinegar, Parmesan cheese, and spices for the dressing. Adjust salt and acidity to taste.
Combining Ingredients
- In a large bowl, combine cooked pasta, chicken, vegetables, mozzarella, and parsley.
- Pour dressing over and toss gently.
Chilling
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
