- Heat olive oil in a large skillet over medium heat. Season chicken thighs with salt and pepper generously on both sides.
- Add the chicken to the skillet and sear until golden brown and the skin is crispy, about 5-7 minutes per side.
- Once browned, remove the chicken from the skillet and set it aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
- Stir in the diced tomatoes, olives, capers, oregano, and red pepper flakes. Cook until the mixture starts to simmer.
- Return the seared chicken to the skillet, cover, and cook for about 25 minutes or until the chicken is fully cooked through with an internal temperature of 165°F.
- Garnish with fresh parsley and serve immediately.
