Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat. Season chicken thighs with salt and pepper generously on both sides.
  2. Add the chicken to the skillet and sear until golden brown and the skin is crispy, about 5-7 minutes per side.
  3. Once browned, remove the chicken from the skillet and set it aside.
  4. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  5. Stir in the diced tomatoes, olives, capers, oregano, and red pepper flakes. Cook until the mixture starts to simmer.
  6. Return the seared chicken to the skillet, cover, and cook for about 25 minutes or until the chicken is fully cooked through with an internal temperature of 165°F.
  7. Garnish with fresh parsley and serve immediately.

Notes

Prep ingredients first for a smoother cooking experience. A splash of vinegar or lemon juice can brighten the dish's flavors just before serving. Store any leftovers in an airtight container for up to 3 days.
