  • 1 container Green Onion Cream Cheese (8 oz) Can substitute with regular cream cheese with added herbs.
  • 8 oz Shredded Mozzarella Cheese For best melt, use finely shredded mozzarella.
  • 1 large package Sliced Mushrooms (about 10 oz) Fresh mushrooms yield the best texture and flavor.
  • 1 small bag Fresh Baby Spinach (about 5 oz) Opt for vibrant green leaves for best quality.
  • 1/4 cup Olive Oil
  • 1/2 cup Chicken Broth
  • Weber Herb and Garlic Seasoning, to taste Feel free to substitute with another seasoning if desired.
  • Pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Evenly arrange the thin-sliced chicken breasts across the bottom of the prepared baking dish.
  3. Scatter the fresh baby spinach and sliced mushrooms over the chicken.
  4. Sprinkle Weber Herb and Garlic Seasoning and pepper over the veggies.
  5. In a microwave-safe bowl, soften the green onion cream cheese, then whisk in the olive oil and chicken broth until smooth.
  6. Pour the cream cheese mixture evenly over the layered ingredients.
Cooking
  1. Cover the baking dish loosely with aluminum foil and bake for 20 minutes.
  2. After 20 minutes, remove the foil, top with shredded mozzarella cheese, and bake uncovered for an additional 10 minutes.
  3. Allow the dish to cool for about 10 minutes before serving. Garnish with fresh herbs.

Notes

Can be prepared in advance and stored covered in the fridge. Assemble and freeze before baking for future meals.
