  • 8 oz shredded mozzarella cheese Choose high-quality cheese for a bubbly crust.
  • 1 small bag fresh baby spinach Look for vibrant, crisp leaves.
  • 8 oz sliced mushrooms (optional) Cremini or shiitake recommended for deeper flavor.
  • 1/4 cup olive oil Used for sautéing the vegetables.
  • 1/2 cup chicken broth Helps keep the chicken moist during baking.
  • 1 container (about 8 oz) green onion cream cheese Choose high-quality brand for best texture.
  • 1 dash black pepper Adjust to taste.
  • 1 dash herb and garlic seasoning Adjust to taste.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat.
  3. Add the sliced mushrooms and sauté until softened, about 5 minutes.
  4. Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Season the spinach and mushrooms with black pepper and herb and garlic seasoning.
  6. Spread the green onion cream cheese evenly over each chicken breast.
  7. Place the chicken breasts on top of the sautéed spinach and mushrooms in the skillet.
  8. Pour the chicken broth around the chicken.
  9. Sprinkle shredded mozzarella cheese over the top of the chicken breasts.
  10. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and golden brown.
