Preparation
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the sliced mushrooms and sauté until softened, about 5 minutes.
- Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes.
- Season the spinach and mushrooms with black pepper and herb and garlic seasoning.
- Spread the green onion cream cheese evenly over each chicken breast.
- Place the chicken breasts on top of the sautéed spinach and mushrooms in the skillet.
- Pour the chicken broth around the chicken.
- Sprinkle shredded mozzarella cheese over the top of the chicken breasts.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and golden brown.
