  • 1/2 cup 1/2 cup mirin A sweet rice wine that enhances the glaze's flavor.
  • 2 tablespoons 2 tablespoons sugar Adjust the sweetness according to preference.
  • Sea salt Sea salt Use fine sea salt for even seasoning.
  • Scallions (white part only), cut into 2-inch (5 cm) lengths

Preparation
  1. To prepare the tare sauce, combine soy sauce, mirin, and sugar in a small saucepan. Bring to a boil and then set aside in a bowl.
  2. On bamboo skewers, thread three pieces of chicken, alternating with scallion sections for added flavor and color.
Grilling
  1. Preheat your grill or stovetop grill pan to medium-high heat. Lightly sprinkle salt on the chicken skewers, turning to season all sides evenly.
  2. Grill the skewers for about 6–8 minutes, turning them frequently to achieve even cooking and a fantastic char.
  3. When the chicken is close to being done, dip each skewer into the tare sauce and allow it to grill for another 30–40 seconds on each side.
  4. Remove from heat, serve hot, and enjoy this cozy chicken yakitori experience immediately.

Notes

For best results, soak wooden skewers in water for about 30 minutes before grilling. Feel free to add other vegetables like bell peppers or zucchini between the chicken pieces. Make ahead by marinating the chicken the night before.
