Preparation
- In a small saucepan, combine the soy sauce, mirin, and sugar. Bring to a boil and then lower the heat, allowing it to simmer until slightly thickened (about 5 minutes). Transfer to a small bowl and set aside.
- Thread three pieces of chicken onto each bamboo skewer, placing a piece of scallion between each chunk of chicken.
- Preheat your BBQ grill over medium heat and lightly sprinkle salt over the chicken skewers for seasoning.
Cooking
- Grill the skewers for about 10 minutes, turning occasionally to cook evenly and achieve a perfect char.
- When almost fully cooked, generously brush the skewers with the tare sauce and grill for an additional 30-40 seconds on each side, allowing the glaze to caramelize subtly.
- Serve immediately, garnished with extra scallions if desired.
Notes
To maximize flavor, marinate the chicken in the tare sauce for a few hours before grilling. If you have leftover tare sauce, it can be used as a dipping sauce for the finished skewers.
