  • 1 lb boneless and skinless chicken leg meat, cut into bite-sized pieces Juicier and more flavorful than breast meat.
  • 1 bunch scallions (white part only), cut into 2-inch lengths Adds a sweet, mild flavor.
  • to taste sea salt
For the tare sauce
  • 3 tablespoons soy sauce
  • 1/2 cup mirin Can be swapped with a mixture of rice vinegar and sugar for a non-alcoholic option.
  • 2 tablespoons sugar

Method
 

Preparation
  1. In a small saucepan, combine the soy sauce, mirin, and sugar. Bring to a boil and then lower the heat, allowing it to simmer until slightly thickened (about 5 minutes). Transfer to a small bowl and set aside.
  2. Thread three pieces of chicken onto each bamboo skewer, placing a piece of scallion between each chunk of chicken.
  3. Preheat your BBQ grill over medium heat and lightly sprinkle salt over the chicken skewers for seasoning.
Cooking
  1. Grill the skewers for about 10 minutes, turning occasionally to cook evenly and achieve a perfect char.
  2. When almost fully cooked, generously brush the skewers with the tare sauce and grill for an additional 30-40 seconds on each side, allowing the glaze to caramelize subtly.
  3. Serve immediately, garnished with extra scallions if desired.

Notes

To maximize flavor, marinate the chicken in the tare sauce for a few hours before grilling. If you have leftover tare sauce, it can be used as a dipping sauce for the finished skewers.
