Preparation
- Begin by deboning the chicken thighs. Cut two small slits along each side of the bone, then carefully remove the bone. Rinse the chicken under cold water and pat dry with paper towels.
- In a large bowl, prepare the marinade by whisking together all the marinade ingredients—lime juice, zest, olive oil, chopped cilantro, jalapeño, chipotle chili powder, garlic, honey, and salt—until well combined. Reserve a bit of the marinade for later basting.
- Place the chicken in the bowl and stir to ensure it’s evenly coated. Cover and marinate in the refrigerator for at least 2 hours, allowing the flavors to meld.
Cooking
- Preheat your grill to medium-high heat. Brush the remaining marinade over the chicken along with a sprinkle of garlic, cilantro, and jalapeño.
- Grill the chicken for about 6-7 minutes on each side or until it achieves a beautiful golden-brown color and is cooked through.
- Serve hot with fresh lime wedges for an extra burst of flavor.
Notes
For maximum flavor, marinate overnight if possible. Let the chicken rest for 5 minutes after grilling for tenderness. If you have extra marinade, bring it to a boil and drizzle it over the chicken as a sauce.
