Preparation
- In a small mixing bowl, whisk together olive oil, chopped cilantro, lime juice, minced garlic, red pepper flakes, cumin, paprika, salt, and black pepper until smooth.
- Place chicken thighs in a large mixing bowl and pour the marinade over. Toss to coat thoroughly.
- Marinate for 15 minutes at room temperature or refrigerate for up to 2 hours.
Cooking
- Heat a large 12-inch skillet over medium-high heat and add about a teaspoon of oil.
- Once hot, lay the chicken thighs in a single layer and cook for 5-6 minutes on one side without moving.
- Flip the chicken and cook an additional 5-6 minutes, or until the internal temperature reaches 165°F.
- Transfer to a serving dish, finish with a squeeze of fresh lime juice, and garnish with extra chopped cilantro.
Notes
Marinate longer for enhanced flavor. Use a meat thermometer for the best results.
