Ingredients
  

For the Marinade
  • 1/2 cup olive oil Use extra virgin for best flavor.
  • 1/4 cup fresh cilantro (chopped) Look for bright green leaves.
  • 1/4 cup lime juice (freshly squeezed from 2-3 limes) Freshly squeezed is recommended.
  • 2 cloves garlic (minced)
  • 1 teaspoon red pepper flakes Omit for a milder version.
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
For the Chicken
  • 2 pounds boneless skinless chicken thighs Can use bone-in skin-on for added flavor.

Method
 

Preparation
  1. In a small mixing bowl, whisk together olive oil, chopped cilantro, lime juice, minced garlic, red pepper flakes, cumin, paprika, salt, and black pepper until smooth.
  2. Place chicken thighs in a large mixing bowl and pour the marinade over. Toss to coat thoroughly.
  3. Marinate for 15 minutes at room temperature or refrigerate for up to 2 hours.
Cooking
  1. Heat a large 12-inch skillet over medium-high heat and add about a teaspoon of oil.
  2. Once hot, lay the chicken thighs in a single layer and cook for 5-6 minutes on one side without moving.
  3. Flip the chicken and cook an additional 5-6 minutes, or until the internal temperature reaches 165°F.
  4. Transfer to a serving dish, finish with a squeeze of fresh lime juice, and garnish with extra chopped cilantro.

Notes

Marinate longer for enhanced flavor. Use a meat thermometer for the best results.
