  • 1 tbsp mild curry powder Can be adjusted depending on spice tolerance.
  • 2 tsp paprika
  • 1 tbsp fresh ginger (finely grated) Grated ginger releases its oils better for more flavor.
  • 3 cloves garlic (crushed)
  • 2 tbsp Frank's classic hot sauce Adjust to taste.
  • 3/4 tsp salt
  • Black pepper To taste.
Main Ingredients
  • 1.5 lb chicken thigh fillets (skinless and boneless) Holds moisture well, perfect for marinades.
  • 1 tbsp oil (for cooking)
  • 3/4 cup water
  • Fresh coriander leaves For garnish.

Method
 

Preparation
  1. Combine the marinade ingredients in a ziplock bag, mixing well to incorporate.
  2. Add the chicken and marinate for at least 3 hours, but overnight is ideal for deeper flavor infusion.
  3. Once marinated, remove the chicken from the bag and shake off any excess marinade, reserving it for later use in the sauce.
  4. Brush the BBQ grill with oil and heat to medium-high, or alternatively, heat oil in a skillet over medium-high heat.
Cooking
  1. Cook the chicken for approximately 7 minutes on the first side and about 5 minutes on the second side or until fully cooked through and juices run clear.
  2. Transfer the chicken to a plate and cover loosely with foil, allowing it to rest for 5 minutes to ensure juicy tenderness.
  3. Serve with the reserved marinade, heated as a sauce, and garnish with fresh coriander leaves for a beautiful finish.

Notes

Marinating overnight maximizes depth of flavor. Use a meat thermometer to ensure chicken reaches 165°F. Adjust lime juice and hot sauce according to palate. Consider serving suggestions for sides and drinks.
