  • 3 cups fresh baby spinach Fresh adds vibrant color and flavor.
  • 1 can artichoke hearts, drained and chopped (14 oz) Can use frozen if thawed and drained.
  • 1 cup non-fat Greek yogurt Can be swapped with low-fat sour cream.
  • 1/2 cup light cream cheese, softened
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a medium casserole dish with nonstick spray.
  2. In a large mixing bowl, combine Greek yogurt, cream cheese, minced garlic, salt, and pepper. Stir until blended smoothly to create a creamy base.
  3. Fold in the shredded chicken, baby spinach, and chopped artichoke hearts. Add half of the mozzarella cheese and mix until evenly distributed.
  4. Pour the mixture into the prepared casserole dish. Top it with the remaining mozzarella cheese and sprinkle all the Parmesan cheese on top.
Baking
  1. Bake for 30-35 minutes, or until hot and bubbly with a golden brown cheesy top.
  2. Allow to cool for about 5 minutes before serving.

Notes

For best results, monitor the casserole towards the end of the baking time to avoid burning. This dish can be made ahead of time and stored in the refrigerator for up to a day before baking.
