Ingredients

Main Ingredients
  • 2 cups cooked, shredded chicken Use leftover rotisserie chicken for a quick option.
  • 1 can 15 oz white beans, drained and rinsed Great for adding fiber and protein.
  • 1 can 4 oz diced green chilies These add a subtle warmth; use jalapeños for an extra kick.
  • 1 onion onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Use the best quality chicken broth for better flavor.
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder Adjust to taste.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream For a lighter version, replace with half-and-half or coconut milk.
Toppings
  • shredded cheese
  • sour cream
  • cilantro

Method

Preparation
  1. In a large pot over medium heat, add a drizzle of olive oil. Once hot, throw in the chopped onion and minced garlic. Sauté until softened, about 3-4 minutes.
  2. Add the shredded chicken, white beans, diced green chilies, chicken broth, cumin, chili powder, salt, and black pepper. Stir well to combine all the ingredients.
  3. Increase the heat to bring the mixture to a boil, then reduce to low and let it simmer for about 20 minutes, allowing the flavors to meld.
  4. Stir in the heavy cream and heat through for another 2-3 minutes, achieving that luscious creamy texture.
  5. Ladle the chili into bowls and garnish with toppings like shredded cheese, sour cream, and fresh cilantro before serving.

Notes

For thicker chili, let it simmer uncovered or mash some of the beans. Get creative with toppings like crushed tortilla chips or diced avocado.
