  • 2 large chicken breasts Use boneless, skinless chicken breasts for convenience.
  • 1 can (15 oz) black beans, drained and rinsed Can be substituted with kidney beans.
  • 1 can (15 oz) corn, undrained
  • 1 can (10 oz) Rotel tomatoes with green chilis, undrained Fresh diced tomatoes with jalapeños can be substituted.
  • 1 packet ranch seasoning mix
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder Adjust according to your spice preference.
  • 1 teaspoon onion powder
  • ½ cup water
  • 8 ounces cream cheese (block, not whipped) Use the block variety for better melting.
For Serving
  • shredded cheese For serving.
  • sour cream For topping.
  • diced avocado For garnish.
  • fresh chopped tomatoes Optional.
  • Fritos or tortilla chips For added crunch.

Method
 

Preparation
  1. Spray the bottom of your crockpot with nonstick cooking spray.
  2. Place the chicken breasts in the crockpot, laying them flat.
  3. Add black beans, corn, Rotel tomatoes, ranch seasoning, cumin, chili powder, onion powder, and water. Mix to combine well.
  4. Place the block of cream cheese on top without stirring it in yet.
Cooking
  1. Cover the crockpot and cook on LOW for 6-8 hours or HIGH for 4 hours.
  2. Once cooked, shred the chicken with two forks right in the crockpot.
  3. Stir everything together until the cream cheese is fully melted and integrated into the chili.
Serving
  1. Serve hot, garnished with shredded cheese, sour cream, diced avocado, fresh tomatoes, and crunchy Fritos or tortilla chips.

Notes

For meal prepping, store the ingredient mix in the refrigerator for up to 2 days or freeze. Use brown chicken for extra flavor.
