Preparation
- Spray the bottom of your crockpot with nonstick cooking spray.
- Place the chicken breasts in the crockpot, laying them flat.
- Add black beans, corn, Rotel tomatoes, ranch seasoning, cumin, chili powder, onion powder, and water. Mix to combine well.
- Place the block of cream cheese on top without stirring it in yet.
Cooking
- Cover the crockpot and cook on LOW for 6-8 hours or HIGH for 4 hours.
- Once cooked, shred the chicken with two forks right in the crockpot.
- Stir everything together until the cream cheese is fully melted and integrated into the chili.
Serving
- Serve hot, garnished with shredded cheese, sour cream, diced avocado, fresh tomatoes, and crunchy Fritos or tortilla chips.
Notes
For meal prepping, store the ingredient mix in the refrigerator for up to 2 days or freeze. Use brown chicken for extra flavor.
