Preparation
- Heat olive oil in a large skillet over medium-high heat and sear the beef chunks until browned on all sides.
- Transfer the browned beef to the crockpot, then add diced potatoes, sliced carrots, chopped celery, onion, and minced garlic.
- In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir until smooth.
- Pour the broth mixture over the beef and veggies in the crockpot, then stir gently.
Cooking
- Cover the crockpot and set it to low for 8-10 hours or high for 4-6 hours.
- If using cornstarch for thickening, mix it with cold water and stir it in during the last 30 minutes of cooking.
Serving
- Garnish with fresh parsley and serve hot alongside crusty bread.
