  • 2 lbs beef stew meat, cut into chunks Look for well-marbled cuts for the best flavor.
  • 4 medium Yukon gold potatoes, peeled and diced Creamy and sweet, but russets can also be used.
  • 4 medium carrots, peeled and sliced Select firm, vibrant-colored carrots.
  • 3 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1/4 cup tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme Fresh thyme is a delightful substitute.
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for browning beef)
  • 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium-high heat and sear the beef chunks until browned on all sides.
  2. Transfer the browned beef to the crockpot, then add diced potatoes, sliced carrots, chopped celery, onion, and minced garlic.
  3. In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir until smooth.
  4. Pour the broth mixture over the beef and veggies in the crockpot, then stir gently.
Cooking
  1. Cover the crockpot and set it to low for 8-10 hours or high for 4-6 hours.
  2. If using cornstarch for thickening, mix it with cold water and stir it in during the last 30 minutes of cooking.
Serving
  1. Garnish with fresh parsley and serve hot alongside crusty bread.
