Preparation
- In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and cooked through. Drain excess fat.
- In the slow cooker, combine the cooked beef, beans, corn, diced potatoes, diced tomatoes, garlic powder, chili powder, salt, and pepper. Stir well to combine.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- Before serving, sprinkle the shredded cheese on top and let it melt.
Notes
You can pre-chop your vegetables and refrigerate them a day ahead. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
