Main Ingredients
  • 1 pound ground beef Choose lean ground beef to keep the dish lighter.
  • 1 can (15 oz) kidney beans, drained and rinsed Can substitute with black beans or pinto beans.
  • 1 can (15 oz) corn, drained
  • 4 medium potatoes, diced Use fresh, firm potatoes.
  • 1 can (10.5 oz) diced tomatoes with green chilies (optional)
  • 1 onion, diced diced onion Sautéing until caramelized enhances flavor.
  • 2 cups shredded cheese (cheddar or your choice) Can use a blend of cheeses.
  • 2 teaspoons garlic powder
  • 1 teaspoon chili powder
  • to taste salt and pepper

Method
 

Preparation
  1. In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and cooked through. Drain excess fat.
  2. In the slow cooker, combine the cooked beef, beans, corn, diced potatoes, diced tomatoes, garlic powder, chili powder, salt, and pepper. Stir well to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  2. Before serving, sprinkle the shredded cheese on top and let it melt.

Notes

You can pre-chop your vegetables and refrigerate them a day ahead. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
