  • 2 pounds beef chuck, cut into 1-inch cubes Choose well-marbled beef for the best flavor.
  • 4 cups beef broth Homemade broth enhances the flavor.
  • 4 cups carrots, sliced
  • 4 cups potatoes, diced You can swap potatoes for parsnips.
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme Fresh thyme can also be used.
  • 1 teaspoon dried rosemary Fresh rosemary can also be used.
  • Salt and pepper to taste
  • 2 tablespoons olive oil Used for browning the beef.

Method
 

Preparation
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the beef cubes, browning them on all sides for added depth of flavor.
  3. In the same skillet, sauté the chopped onions and minced garlic until fragrant and translucent, then transfer to the crockpot.
Cooking
  1. Add the sliced carrots, diced potatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper to the crockpot.
  2. Stir gently to combine all ingredients.
  3. Cover the crockpot and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is fork-tender and the vegetables have cooked through.
Serving
  1. Ladle the rich stew into warm bowls and enjoy with crusty bread or a simple salad for a complete meal.

Notes

Use a fat separator to remove excess grease before serving. Let the stew sit for 30 minutes after cooking for the best flavor.
