Ingredients

Main Ingredients
  • 2 pieces boneless, skinless chicken breasts Opt for fresh over frozen for the best texture.
  • 1 cup long-grain white rice Can be substituted with brown rice; adjust cooking times.
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese Feel free to experiment with other cheese blends.
  • 2 cups broccoli florets Fresh is preferable for crunch; frozen can be used towards the end.
  • 1 can cream of chicken soup (10.5 oz)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Method

Preparation
  1. Begin by laying the chicken breasts flat at the bottom of your crockpot, ensuring they’re not overlapping.
  2. Sprinkle the long-grain white rice evenly around the chicken, distributing it well for even cooking.
  3. Pour the chicken broth, heavy cream, and cream of chicken soup over the rice and chicken. Stir gently to combine.
  4. Season with garlic powder, onion powder, salt, and black pepper, ensuring everything is well-coated.
Cooking
  1. Cover the crockpot and set it to LOW for 4-5 hours, allowing the chicken to become tender and the rice to absorb all the flavors.
  2. Once the chicken is fully cooked, shred it using two forks and return it to the pot.
  3. Gently fold in the broccoli florets and shredded cheddar cheese, then cover again and cook for an additional 30 minutes until the broccoli is tender and the cheese is meltingly delicious.

Notes

Tips: Monitor cooking time, prep ahead, adjust seasonings as needed, and let the dish rest for 10-15 minutes before serving.
