Chicken and Sauce
  • 2 cups cooked chicken, shredded Use cooked rotisserie chicken for maximum convenience.
  • 1 cup peas Frozen peas work beautifully for quick prep.
  • 1 cup carrots, diced Feel free to mix in your preferred vegetables.
  • 1 can cream of chicken soup Try a low-fat version or a homemade alternative for a healthier twist.
  • 1/2 cup milk You can reduce this if you prefer a thicker filling.
Biscuit Topping
  • 1 cup shredded cheese (cheddar or your choice) Use a sprinkle of nutritional yeast as a substitute for a lighter option.
  • 1 cup biscuit mix Bisquick or any other brand works well, or make your own from scratch.
  • 1/2 cup water
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the shredded chicken, frozen peas, diced carrots, cream of chicken soup, and milk until everything is blended well.
  3. Pour the chicken mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  4. In another bowl, stir together the biscuit mix and water until a soft dough forms.
  5. Drop spoonfuls of this mixture over the chicken filling, leaving some gaps for the sauce to bubble up.
  6. Generously sprinkle the shredded cheese on top of the biscuit layer.
Baking
  1. Place in the oven and bake for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbling.
  2. Allow the cobbler to cool slightly before serving.

Notes

Allow the cobbler to sit for a few minutes after baking for a thicker filling. Avoid overmixing the biscuit topping.
