Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper. Blend well until fully combined.
- Carefully cut a pocket in each chicken breast—be gentle to avoid cutting through completely.
- Stuff each chicken breast generously with the cheese and spinach mixture. Press the openings to secure the filling.
Cooking
- Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, place the stuffed chicken breasts in the skillet and sear for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and pop it into the preheated oven. Bake for 20-25 minutes or until cooked through and reaches 165°F (74°C).
- Remove from the oven and allow to rest for a few minutes before slicing and serving.
Notes
To save time, prepare the stuffed chicken in advance and store it in the refrigerator for up to a day. You can also freeze it before baking. Drizzle with olive oil and sprinkle fresh herbs on top for visual appeal.
