  • 2 pieces boneless, skinless chicken breasts Look for breasts that are plump and fresh.
  • 1 cup spinach, chopped Fresh spinach is best for a bright taste.
  • 1/2 cup cream cheese, softened Use softened cream cheese for easy blending.
  • 1/2 cup mozzarella cheese, shredded Feel free to substitute with provolone or gouda.
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper. Blend well until fully combined.
  3. Carefully cut a pocket in each chicken breast—be gentle to avoid cutting through completely.
  4. Stuff each chicken breast generously with the cheese and spinach mixture. Press the openings to secure the filling.
Cooking
  1. Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, place the stuffed chicken breasts in the skillet and sear for 3-4 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish and pop it into the preheated oven. Bake for 20-25 minutes or until cooked through and reaches 165°F (74°C).
  3. Remove from the oven and allow to rest for a few minutes before slicing and serving.

Notes

To save time, prepare the stuffed chicken in advance and store it in the refrigerator for up to a day. You can also freeze it before baking. Drizzle with olive oil and sprinkle fresh herbs on top for visual appeal.
