Preparation
- Season both sides of the chicken breasts with salt and pepper to taste.
- In a large skillet, heat olive oil over medium-high heat until shimmering.
- Add the seasoned chicken breasts to the skillet, cooking for about 5-7 minutes on each side until they are golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds.
- Pour in the chicken broth and scrape up any brown bits from the bottom of the skillet.
- Reduce the heat to medium-low, then stir in the heavy cream and Boursin cheese until melted and smooth.
- Return the chicken to the skillet, spooning sauce over top, and let simmer for an additional 3-5 minutes.
- Sprinkle with fresh chopped parsley and serve hot.
Notes
For the best flavor, let the chicken brown properly and consider making the sauce in advance. Pair with mashed potatoes or rice for a complete meal.
