Preparation
- Gather all ingredients and chop vegetables into bite-sized pieces for even cooking.
- Cook the lo mein noodles according to package instructions until they are al dente; drain them well and set aside to cool.
Cooking
- Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken until golden brown and fully cooked, about 6-8 minutes. Stir occasionally for even cooking. Remove the chicken from the skillet and set aside.
- In the same pan, add an extra splash of oil if needed, then stir-fry the bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
- Return the cooked chicken to the skillet along with the vegetables. Add the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well combined.
- Serve hot with extra soy sauce on the side if desired.
Notes
Don’t crowd the pan while cooking; prep ahead to save time on busy nights. This dish is easily customizable for varying tastes.
