- Heat the olive oil in a skillet over medium heat until shimmering.
- Add the sliced onions and green bell peppers, sautéing until softened, about 5 minutes, stirring occasionally.
- Season the chicken breasts with salt and pepper on both sides, then add them to the skillet.
- Cook until the chicken is golden and cooked through, about 6-7 minutes on each side.
- Once cooked, transfer the chicken to a cutting board and slice it into thin strips.
- Return the chicken strips to the skillet, combining them with the sautéed veggies.
- Sprinkle cheese over the mixture and cover the skillet for a couple of minutes, allowing the cheese to melt.
- Toast the hoagie rolls lightly if desired, then generously scoop the chicken and pepper mixture onto the rolls and serve promptly.
