Cooking Instructions
  1. In a large pan, heat a drizzle of oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 4-5 minutes.
  3. Stir in the garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the chicken breasts to the pan and cook until they’re golden brown on both sides, approximately 4-5 minutes per side.
  5. Sprinkle in the curry powder, salt, and pepper, mixing well to coat the chicken evenly.
  6. Pour in the coconut milk, bringing it to a gentle simmer.
  7. Cover the pan and let it cook for about 15-20 minutes or until the chicken is cooked through and tender.
  8. Serve hot, garnished with fresh cilantro if desired.

Notes

Make sure to sear the chicken for a nice crust to lock in moisture. Fresh ingredients enhance the flavor significantly. Optionally, you can marinate the chicken in coconut milk, garlic, and ginger for 30 minutes before cooking.
