- Begin by cooking the pasta according to package instructions until it reaches al dente. Drain and set aside, making sure to reserve a bit of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and chicken broth, stirring to combine, and let it simmer for about 5 minutes until thickened slightly.
- Add the shredded rotisserie chicken and fresh spinach to the skillet, cooking until the spinach wilts, approximately 2-3 minutes.
- Toss in the cooked pasta, stirring everything together. Season with salt and pepper to taste, adding a splash of reserved pasta water if needed.
- Serve hot, topped with freshly grated Parmesan.
Notes
For a bit of heat, add crushed red pepper flakes while sautéing the garlic. Adjust sauce thickness by modifying the amount of cream or broth.
