  • 2 cups shredded rotisserie chicken Opt for skinless for a lighter dish.
  • 8 oz penne or fettuccine pasta Feel free to use any pasta you have on hand.
  • 1 cup heavy cream Can be substituted with half-and-half for a lighter version.
  • 1/2 cup freshly grated Parmesan cheese Freshly grated melts better than pre-packaged.
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach Fresh is preferable, but frozen will work.
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

Cooking
  1. Begin by cooking the pasta according to package instructions until it reaches al dente. Drain and set aside, making sure to reserve a bit of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the heavy cream and chicken broth, stirring to combine, and let it simmer for about 5 minutes until thickened slightly.
  4. Add the shredded rotisserie chicken and fresh spinach to the skillet, cooking until the spinach wilts, approximately 2-3 minutes.
  5. Toss in the cooked pasta, stirring everything together. Season with salt and pepper to taste, adding a splash of reserved pasta water if needed.
  6. Serve hot, topped with freshly grated Parmesan.

Notes

For a bit of heat, add crushed red pepper flakes while sautéing the garlic. Adjust sauce thickness by modifying the amount of cream or broth.
