Preparation
- Place the chicken breasts at the bottom of the Crock Pot, ensuring an even layer for thorough cooking.
- Add the diced onions and minced garlic on top of the chicken layer.
- Pour in the chicken broth and diced tomatoes, stirring gently to ensure all ingredients are well mixed.
- Sprinkle Italian seasoning over the mix along with salt and pepper to taste.
Cooking
- Cover the Crock Pot and cook on low for 6 hours.
- Once the cooking time is up, remove the chicken and shred using two forks.
- Stir in the heavy cream and grated Parmesan cheese until a creamy consistency is achieved.
- Add in the tortellini and spinach, cooking on high for an additional 30 minutes, or until the tortellini is tender.
Serving
- Serve hot, garnished with fresh basil.
Notes
For best results, shred chicken while warm and taste before serving to adjust seasoning. If too thick, add chicken broth for desired consistency.
