  • 1.5 pounds boneless, skinless chicken breasts You can use thighs for a richer flavor.
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 cups chicken broth Use low-sodium if preferred.
  • 1 can diced tomatoes (14.5 oz) Choose fire-roasted for added depth.
  • 1 cup heavy cream For a lighter option, swap with half-and-half or coconut cream.
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • to taste Salt
  • to taste Pepper
  • 1 cup tortellini (fresh or frozen) Select cheese-filled for extra flavor.
  • 1 cup fresh spinach
  • as needed Fresh basil, for garnish

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the Crock Pot, ensuring an even layer for thorough cooking.
  2. Add the diced onions and minced garlic on top of the chicken layer.
  3. Pour in the chicken broth and diced tomatoes, stirring gently to ensure all ingredients are well mixed.
  4. Sprinkle Italian seasoning over the mix along with salt and pepper to taste.
Cooking
  1. Cover the Crock Pot and cook on low for 6 hours.
  2. Once the cooking time is up, remove the chicken and shred using two forks.
  3. Stir in the heavy cream and grated Parmesan cheese until a creamy consistency is achieved.
  4. Add in the tortellini and spinach, cooking on high for an additional 30 minutes, or until the tortellini is tender.
Serving
  1. Serve hot, garnished with fresh basil.

Notes

For best results, shred chicken while warm and taste before serving to adjust seasoning. If too thick, add chicken broth for desired consistency.
