Ingredients

Main ingredients
  • 4 pieces boneless, skinless chicken breasts Look for organic, free-range chicken for the best flavor and quality.
  • 1.5 lbs baby potatoes, halved Choose firm potatoes; avoid any with blemishes or sprouts for optimal freshness.
  • 1/2 cup grated parmesan cheese Freshly grated cheese melts beautifully and enhances the dish’s overall flavor.
  • 4 cloves garlic, minced Opt for fresh garlic cloves for a more robust flavor.
Seasonings and oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
Garnish
  • 1/4 cup chopped fresh parsley For a burst of color and freshness.

Method

Preparation
  1. Place the chicken breasts and halved baby potatoes in your crockpot.
  2. In a mixing bowl, combine the parmesan cheese, minced garlic, dried oregano, dried basil, salt, black pepper, and olive oil.
  3. Pour the cheesy garlic mixture over the chicken and potatoes, ensuring everything is evenly coated.
Cooking
  1. Cover the crockpot and cook on low for 6 hours or high for 3 hours, until the chicken reaches an internal temperature of 165°F.
  2. Before serving, sprinkle fresh parsley over the top.

Notes

You can prepare the garlic mixture a day in advance. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to three months. Reheat in the oven at 350°F to maintain texture and flavor.
