  • 4 pieces boneless, skinless chicken breasts Opt for fresh chicken for the best flavor.
  • 1.5 pounds baby potatoes, halved Look for smooth-skinned, firm potatoes.
  • 1 cup chicken broth Low sodium recommended.
  • 0.5 cup grated Parmesan cheese Freshly grated for the best melt.
  • 4 cloves garlic, minced Mince to release aromatic qualities.
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Wash the baby potatoes thoroughly and slice them in half.
  2. Mince the garlic cloves and set them aside.
  3. Rub the chicken breasts with olive oil, then sprinkle with Italian seasoning, salt, and pepper.
Cooking
  1. Layer the halved baby potatoes at the bottom of the crockpot.
  2. Nestle the seasoned chicken breasts on top of the potatoes.
  3. Pour the chicken broth over the layers, then top with minced garlic and grated Parmesan.
  4. Cover the crockpot and let it cook on low for 6-7 hours or on high for 3-4 hours.
  5. Serve warm, optionally garnishing with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Feel free to add additional vegetables for a more hearty dish.
