Preparation
- Wash the baby potatoes thoroughly and slice them in half.
- Mince the garlic cloves and set them aside.
- Rub the chicken breasts with olive oil, then sprinkle with Italian seasoning, salt, and pepper.
Cooking
- Layer the halved baby potatoes at the bottom of the crockpot.
- Nestle the seasoned chicken breasts on top of the potatoes.
- Pour the chicken broth over the layers, then top with minced garlic and grated Parmesan.
- Cover the crockpot and let it cook on low for 6-7 hours or on high for 3-4 hours.
- Serve warm, optionally garnishing with fresh parsley.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Feel free to add additional vegetables for a more hearty dish.
