  • 1 can Fire-roasted tomatoes Canned for convenience.
  • 2 cups Carrots, chopped Ensure they are crisp and vibrant.
  • 2 cups Celery, chopped Ensure they are crisp and vibrant.
  • 1 medium Onion, diced
  • 1 cup Ditalini pasta Small pasta shape excellent for broth.
  • 1 cup Parmesan cheese, for serving Freshly grated for added flavor.
  • 4 cups Chicken or vegetable broth Vegetable broth is a good replacement.
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Italian herbs (such as basil and oregano) Use fresh herbs if available.

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and brown it thoroughly, using a wooden spoon to crumble the meat as it cooks, about 5-6 minutes.
  2. Add the chopped carrots, celery, and diced onion to the pot. Sauté everything together until softened, about 5-7 minutes.
  3. Stir in the fire-roasted tomatoes, chicken (or vegetable) broth, and Italian herbs. Bring the mixture to a gentle boil.
  4. Add the ditalini pasta, stirring occasionally while cooking according to package instructions until it’s tender—usually about 10 minutes.
  5. Taste your magical soup, then season generously with salt and pepper to elevate the flavors.
  6. Ladle the soup into bowls and finish with a sprinkle of freshly grated Parmesan cheese for a delicious touch.
