  • 1 tablespoon Dijon mustard A good quality mustard elevates the dish.
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Pat the chicken breasts dry and season with salt, black pepper, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 3 minutes on each side until golden brown.
  3. In your crockpot, layer onions and garlic. Place the seared chicken on top.
Cooking
  1. Whisk together chicken broth, soy sauce, honey, Dijon mustard, and thyme in a bowl. Pour over the chicken.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  3. Once cooked, cover chicken with foil to keep warm. Mix cornstarch and water to create a slurry; stir into remaining liquid and cook on high for an additional 10-15 minutes to thicken the sauce.
  4. Serve the chicken hot with the sauce and garnish with fresh parsley.

Adjust cooking times based on your crockpot’s wattage. Searing chicken locks in moisture. Add a squeeze of lemon juice before serving to brighten flavors.
