Ingredients

Main Ingredients
  • 4 pieces boneless chicken breasts Use fresh or thawed chicken breasts; frozen may require extra cooking time.
  • 1 cup rice (long grain or jasmine) Avoid quick-cook rice varieties for this dish.
  • 2 cups chicken broth Can be substituted with vegetable broth for a vegan version.
  • 2 pieces lemons (juiced and zested) Fresh lemons give the best flavor, adjust bottled lemon juice according to taste.
  • 1 piece onion (chopped)
  • 3 cloves garlic (minced) For a milder flavor, omit the garlic.
  • 2 teaspoons dried oregano Fresh herbs can elevate the dish.
  • 1 teaspoon dried thyme Consider using fresh thyme for a more vibrant flavor.
  • Salt and pepper to taste
  • Fresh parsley for garnish Add just before serving.

Method

Preparation
  1. In your slow cooker, combine the chicken, rice, chicken broth, lemon juice, lemon zest, chopped onion, minced garlic, oregano, thyme, and a sprinkle of salt and pepper. Ensure all ingredients are well mixed.
  2. Stir until everything is well combined, and make sure the rice is evenly spread throughout the mixture.
Cooking
  1. Cover the slow cooker with a lid and set it to low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and the rice is tender, absorbing the lemony flavor.
  2. Once cooking is complete, remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the slow cooker, mixing it well with the rice and broth.
  3. For a touch of freshness, garnish your dish with freshly chopped parsley before serving warm.

Notes

Timing Matters: If cooking on high, monitor closely towards the end to prevent overcooking. Mix It Up: Allow the chicken and rice to combine flavors for at least 30 minutes before serving, enhancing the overall taste.
