  • 1 lb Italian sausage Choose spicy or mild based on preference.
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth Use low-sodium for better control over flavor.
  • 1 can diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 4 cups fresh spinach Fresh wilts beautifully; if using frozen, add at the end.
  • 8 oz cheese tortellini Fresh or frozen works, but cooking times may vary.
  • to taste Salt and pepper
  • Grated to taste Parmesan cheese for serving

Cooking
  1. In a large pot, cook the sausage over medium heat until browned, about 5-7 minutes.
  2. Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.
  3. Pour in the chicken broth and diced tomatoes, then bring to a gentle boil.
  4. Stir in the dried oregano, dried basil, and tortellini. Reduce heat and simmer for about 5-7 minutes, until the tortellini is tender.
  5. Gently fold in the fresh spinach and cook until wilted, about 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

For the best flavor, add fresh herbs at the end of cooking. This soup tastes even better the next day. Ideal for make-ahead meals.
